WIAW: Sushi bowls, Oats, Nice Cream & Kale!

Already Wednesday again?? Well, this Wednesday is extra special because I am officially on SPRING BREAK! Woo! I’m gonna lay on a beach for a week straight sipping margaritas. Okay, maybe not. But that’s what I wish I was doing. Instead, I am going to have a fabulous staycation in my hometown and do some of my favorite things. obviously those things are running, playing with my dog, hanging with the fam, cooking, and working on getting some new content up on the blog!

Now, without further ado- here is what I eat in a day. Sometimes I eat more than this, sometimes I eat less. This is just a typical day! Thanks to Jen over at Peas & Crayons for starting this fun food party!

Oh yeah oats for breakfast! But really – would you expect anything less? I made these with 1/2 cup GR Bob’s Red Mill Old Fashioned Oats, 1 tbsp ground flax, 1/2 scoop Garden of Life Smooth Coffee protein, cinnamon, coconut sugar, frozen banana, and chocolate PB2. SO MUCH YUM.

Lunch was a delicious deconstructed sushi/ asian bowl. I made brown rice and topped it with chopped carrots, tomato, cucumber, avocado, and shelled edamame beans. I then drizzled some San-J Thai peanut sauce over the top. SO GOOD. If you haven’t tried San-J gluten free asian sauces, then you are missing out! I love the Thai Peanut and Szechuan flavors.

Snack time! I had two small bosc pears and some grapes! I love having fruit for snacks during the day. it is super portable, easy, and healthy!

Red grapes are the best kind if I do say so myself.

For dinner I made a garlicky avocado kale salad. First, I chopped up some curly kale and massaged it with lemon juice. Then I made an avocado dressing using 1/4 of an avocado, unsweetened almond milk, lemon juice, garlic, sea salt, and black pepper. If you want a more in depth recipe- let me know! I then topped the salad with tomato, bell pepper, canal beans, cucumber, and some seasoned quinoa puffs! Gosh, I love fresh salads- especially as the weather gets warmer. So refreshing.

Can’t forget about dessert! I have been loving frozen bananas/ banana ice cream lately. The frozen bananas can be a little time consuming to blend without adding anything else, so I decided to add some fresh strawberries and make a strawberry-banana nice cream. These are the kinds of desserts I love- light, fresh, sweet, and wholesome. Plus, it won’t make you feel like crap when you wake up the next day.
