Tomato-Cucumber-Avocado Salad
This recipe is so easy, fresh, and light making is perfect for summertime. This would be a great dish to bring to a cookout or family gathering. I think even people who aren’t super healthy eaters would love this! Best thing about it is that it is cheap and comes together in a flash.
My Mom even made more of this recipe for my Dad’s lunch the next day since we finished it all at dinner. That really says it all.
I love dishes that are versatile and can be made in a pinch. This salad would be delicious topped on a bed of greens with quinoa, as a side dish, or added to a wrap for a healthy lunch- the possibilities are endless.
Cucumbers, avocado, tomato, and red onion all come together to make this dish so flavorful. Another great thing about this dish is that you don’t have to get the measurements super exact- I pretty much always eyeball all my measurements and it always turns out great. If you need a little bit of help in the kitchen, I will provide some exact measurements.
Here’s what you will need:
1 large/ 2 small cucumbers
2-3 roma tomatoes
1/4 cup thinly sliced red onion
1 medium-large avocado
juice from half a small lemon (more/less to taste)
1 tsp garlic powder
1/2 tsp black pepper
1/2 tsp sea salt
Directions:
Chop up the cucumber into small chunks. I like to slice mine in half lengthwise and then into fourths from there and then chop it up. Add the cucumber to a bowl. Chop up the tomatoes and add those along with the thinly slices red onion as well. Mix everything together. Then chop up the avocado into small chunks and add that as well. Next add the juice from 1/2 a lemon as well as the sea salt, black pepper, and garlic powder. Give everything a good mix and serve it up immediately or put it in the fridge for a bit to really let the flavors soak together.
This will keep well in the fridge for 2-3 days. Make it the night before for lunch or toss it together for a quick snack or dinner side dish!
