WIAW: Oat Porn, Fancy Salads & Mangos

Comin at ya 2 weeks in a row with WIAW shenanigans! Everyone really seemed to enjoy my post last week on what I eat in a day (judging by the amount of page views ;))so I decided to do another one today!

As always thanks to Jen over at Peas & Crayons for creating this trend where health/food bloggers share their daily eats. I love being introduced to new food dishes, flavor/ food combinations, and small/local businesses that create healthy products. I hope you find some new food inspiration from my post!

Here’s a recount of what I ate and did yesterday!

I was lucky to start my day with a morning run along the lake. This usually never happens (since I usually start class at 8 and it is dark early in the morning), but my professor cancelled class because of the snow storm that was headed our way. Even luckier for me- the snow storm never hit & I was able to get in 5.5 miles before class- woo! I actually attempted taking a picture down by the lake (which I also never do since I hate stopping) to document the gloomy, green water.

Nextup: Breakfast

This was my bowl of oats from yesterday- Gluten free rolled oats, flax seed, cinnamon, cooked on the stovetop and topped with coconut sugar and banana! Not seen- another cut up banana under the oats!

Here’s some more oat porn from the past few days!

Cinnamon-coconut sugar-apple oats- Totally loving on the coconut sugar lately! It sweetness up oats naturally, and has a low glycemic index which is awesome. My best tip for using sugar is just to top it on your oats, instead of cooking with it. That way you will use less, while actually tasting the sweetness more!

Fresh blueberries on oats are amazing!

But frozen blueberries are also pretty darn delicious! They warm up/ melt in hot oats and make it taste like a blueberry muffin-yum!

Lunch time plate! I have been loving mangos so much lately. I have lucked out at the store with some delicious ones!

Also had some of my beet-carrot-orange juice! It is so zingy and really left me feeling energized.

Snack time! Fruit is my go-to snack. I love how portable it is. You can always fine me with an apple, pear, or banana in my backpack.

Dinner: Ginormous salad featuring butternut squash and grapes. I had a delicious salad similar to this while out at a restaurant last week, so I decided to recreate it! The salad at the restaurant had arugula, pearl onions, butternut squash, grapes, quinoa, and a grape vinaigrette. I made mine with an arugula-radish-kale mix, roasted red onion, roasted butternut squash, brown rice, grapes, and a grape vinaigrette! It was amazing and I think I came pretty close to the original dish.

Post dinner snack: More mango! Can’t go wrong with these delicious tropical fruits.
