Curry Roasted Chickpeas

Roasted Chickpeas are one of my current obsessions. I am a fan of anything made with these delicious little balls of protein- curry, salads, quinoa dishes- and don’t even get me started on hummus. I think hummus should be its own food group. Who agrees??

Roasting chickpeas really takes their flavor profile to the next level. That, and some delicious curry powder. Chickpeas are an excellent source of protein, fiber, and healthy carbohydrates. There are so many health benefits from eating chickpeas. Check out this whole list below- as if I need any more reasons to eat chickpeas?!?! Nope, I don’t.

Did you know all of those facts about chickpeas? Pretty great, right? So, grab the hummus & carrots and get snacking! You can bet that I will be.

Now, lets get to the recipe. I make my own spice blend for my chickpeas and potatoes and then use it until I run out. So the recipe for the spice blend will probably be more than you need for one can of chickpeas, but feel free to use as much of the spice that you please!

Curry Spice Blend

2 tbsp curry powder

1 tsp garlic powder

1/2 tsp turmeric

1/4 tsp black pepper

1/4 tsp sea salt

 

Roasted Curry Chickpeas

1 can of no salt added chickpeas

Curry Spice Blend- as much as your heart desires!

 

Directions: Mix together the spices for the spice blend. Preheat the oven to 400 degrees fahrenheit. Then rinse and drain the can of chickpeas. Add the chickpeas to a small bowl and toss them with the spice blend well to coat. Transfer the chickpeas to a baking sheet lined with with parchment paper. Make sure to use parchment paper if you don’t want the chickpeas to stick to the pan! Cook the chickpeas for 30-40 minutes depending on desired crispiness. I usually cook my for 30 minutes, or just over 30 minutes because I prefer them soft on the inside and crispy on the outside.

When they are done, you will get this delicious finished product!
