Guac- Kale Mole!

What’s better than regular guacamole?? Guac-KALE-mole! I stole this idea from wholefoods. They sell gauc-kale-mole for $8.99 a pound! That is crazy expensive! My recipe cost about $5 and it made easily 2.5 pounds or more! It helped that the avocados my family bought were on sale for .69 cents a piece.

Ingredients:

5 small ripe avocados

5 leaves of Flat Leaf Kale

4 cloves garlic

3/4 cup chopped cilantro

Juice of 2 limes

1/2 teaspoon salt

1/4 large red onion- or 1/2 small red onion

2 yellow tomatoes (You can use regular/ roma etc. but we only had yellow at home)

1 jalapeno

Directions:

Remove the back stems from the kale and chop well. I left mine in fairly big chunks since I was using a food processor to make this. You really will need a food processor in order to make the guacamole nice and smooth and make sure the kale is well incorporated.

Next, chop the cilantro, tomatoes, jalapeno, and red onion. Then, toss the large chunks of red onion and garlic into the food processor to mince it better. Then, add the kale, lime juice, cilantro, and jalapeno and blend well. Next, add the avocados and puree well again. Then, after it is well incorporated, add the salt and the yellow tomatoes and blend for a few more seconds. Then you’re done! Add it to a bowl and it’s ready to be served! If you’re avocados were not chilled in the fridge beforehand, you will probably want to put it in the fridge for a while to get it cold.

This recipe is a great way to add more veggies to your day and to add volume with extra calories to guacamole! My whole family really enjoyed this and we have tons left over! It made such a large amount! My mom brought some for her lunch today to eat with veggies and they also enjoyed it with their chicken carnitas and with tortilla chips. This is perfect for mexican dishes, snacking with chips, or paired with long carrot sticks which is my personal favorite.

This recipe is great because it is so easy to clean up! I only had to clean our ninja food processor and the cutting board. I love recipes that don’t require much clean up because lets me honest-I love cooking, but hate the clean up.
