Avocado Zoodles w/ Chicken!
Do you have a veggie spiralizer??? I absolutely adore mine! I decided to go with a low carb option for dinner on this night so I made zoodles with grilled chicken, red onion, tomatoes, and an avocado sauce. I planned on making this pesto zoodles, but when I opened my contained of pesto from Whole Foods it was all moldy! It was so gross. It wasn’t supposed to expire for quite a few more months. So I had to improvise because I already had my food cooking!
I had half of a ripe avocado in the fridge, so I decided to use that. I made a thick avocado sauce to stir into it. It turned out so well! Definitely not the prettiest of dishes, but it tasted damn delicious.
You will need:
1 chicken breast
3/4 of a large zucchini
1 small red onion
8 cherry tomatoes
Sauce:
12 avocado
1 teaspoon fresh garlic
1 tablespoon almond milk
Dash each of onion powder, sea salt, crushed red pepper, black pepper, and Lary’s seasoned salt (sorry don’t have exact measurements because it was such a small amount)
Directions:
Start by spiralizing the zucchini and chopping the onions. I tossed these into a pan on low and began cooking them while I prepared my grilled chicken on my george foreman grill. I seasoned the chicken with garlic, seasoned salt, and fiery 5 pepper seasoning. Then, after the chicken is done cooking, chop it up and toss it into the pan. Then, make the avocado sauce by mashing up the avocado and blending it with all of the spices and almond milk. Slice the cherry tomatoes in half and add them to the pan. Then mix in the sauce. I didn’t end up using all of the sauce. It actually made quite a lot! Continue heating it on low for a few minutes and then enjoy!
