Cinnamon-Coconut Roasted Sweet Potatoes
Sweet potatoes are on my list of top favorite foods ever. They are such a great side dish for dinners and so versatile! When I start upping my mileage and start training for races, I always eat so many more sweet potatoes! They are great fuel for runners and super cheap, making them a winner in my book! There was even a time when I was eating sweet potatoes for breakfast because they are such a great pre-run fuel. This simple recipe is one of my favorite ways to make them.
Recipe:
1 medium-large sweet potato
2 teaspoons coconut oil
1 teaspoon cinnamon
1 tablespoon unsweetened shredded coconut flakes
Directions:
Pre-Heat Oven to 350 degrees
Chop/slice the sweet potatoes- I made these ones into coins, but I also do cubed/chunks often as well. Place the sweet potatoes in a glass baking dish
Melt 2 teaspoons of Coconut Oil
Toss the potatoes in coconut oil, then add the cinnamon and shredded coconut and mix well.
Place aluminum foil over the baking dish and bake for 45 minutes. Then take off the foil, mix well, and bake for an additional 15 minutes. Enjoy!
