Blueberry-Banana Zoats

Have you ever had zucchini bread??? My grandma used to make a delicious homemade zucchini bread. It was cinnamon-y, soft, and subtly sweet. That is how I would describe this breakfast. If you are looking for ways to add more veggies to your day, why not start with breakfast??

Adding zucchini to my oats is my favorite way (well maybe 2nd favorite) to incorporate veggies into breakfast. It adds a lot of volume, nutrients, and fiber to your meal without adding hardly any calories!

Keeping this post short & sweet because I am already swamped with school- so here is the recipe!

1/2 cup GF oats (or regular)

1 cup boiling water

1 flavored tea bag (I used Vanilla Chai & recommend a similar flavor)

1/2 tbsp cinnamon

1/2 banana

1/2 cup blueberries (fresh or frozen)

2/3 cup shredded zucchini

1 tsp. vanilla extract

1/2 scoop Vega Chocolate Protein Powder (Optional)

Optional: shredded coconut, nuts, peanut butter, etc.

You can make this recipe in the microwave or the stove top. I used the stove top to make mine. Begin by boiling the water and adding a tea bag. I love adding tea bags to my boiling water for my oats because it gives it so much flavor! Add the oats to the water and mix well. After cooking for a couple minutes & the water has reduced a bit, add the zucchini to the pot. Mix everything well, then add the cinnamon, vanilla extract, protein powder, and other optional mix ins.

Pour the oatmeal into a bowl & add the sliced banana and blueberries on top! Grab a spoon & dig in!

This is the perfect weekend, or weekday breakfast (unless you are chronically running late like me).
