WIAW: Oats, Fruit, Soup & Vodka Sodas

Happy WIAW folks. In the internet world, Wednesdays are a day to post all of the food you eat in one day online. I’m not sure why people are so interested in a day’s worth of eats, but hey, I ain’t complaining. I love sharing the meals I eat because I think that it shows that living a gluten-free vegan lifestyle can be easy, cheap, and delicious! I think there are so many misconceptions about eating healthy, let alone a gluten free-vegan diet.

Breakfast: 7:00 a.m. I got up at 6:30 to study for a bit before my 8 a.m. class. I had some oats with bananas (2), coconut sugar, unsweetened shredded coconut, cinnamon & flax for breakfast. Would you expect anything else from me??

Then, I had class from 8-9. On Tuesdays, I have a break from class from 9-12 which is amazing because last semester we never had any breaks from class. We had class basically every day from 8-4/5 so it is quite refreshing to have a break. Lets be honest though- the main reason that i love having this break is because it lets me workout in the morning! I am definitely a morning workout person so I love when I am able to get a workout in earlier in the day.

I went for a 6.5 mile run at 9, and then studied for a bit before my next class at noon. I ate 1/2 of a cantaloupe and an apple pear while studying.

Not pictured: I also brought a huge bag of baby carrots with homemade guacamole to my class at noon to snack on during class.

After I got finished with class at around 4 p.m., I made some air-popped popcorn. I ate about 3x this amount (okay maybe about 5x this amount) of popcorn and sprinkled in with sea salt. Usually if I have olive oil spray, I will spray a bit on my popcorn to get the sea salt to stick.

For dinner i had my favorite soup of the moment with some homemade oil-free tortilla chips! You can find the recipe for this delicious Mexican Crock Pot Soup right HERE!  I made the soup on Sunday in my crock pot, and have been enjoying it all week for dinner/ lunch. i love how quick and easy it is to just put in a pot on the stovetop and warm up. I have dinner ready in 5 minutes which is awesome for when you are virtually always starving like me!

And that was everything that I ate for the day. Usually I would eat a night snack, but I was out at a campus bar celebrating one of my classmates birthdays. I limited myself to 1 drink- which of course was a vodka soda, and came home and slept like a baby.
