Today I am sharing with you what I eat in a typical day on the weekend when I have a little bit more time to cook/prep my food. Although as we all know, some weekends can get pretty hectic, but I often have a more time to cook some of my favorite dishes.

I hope this post gives you some ideas on how to incorporate more plant-based meals into your diet. Eating more plants will definitely help cut back on your grocery bill and make you a healthier person overall!

Let’s get into it:

The day of eats I am bringing you is from Sunday- aka the last day of my short break before starting my second year of dental school. Even though we only had a short summer break (3 weeks), I still had lots of do! I wanted to get in one more run at home before I left, so I got up and ran a quick five miles. When I got home I showered, packed up some things and made this mouthwatering breakfast.

For breakfast I made Nice cream. I think the Nice Cream craze is in full swing on instagram right now. I definitely am not complaining. I love drooling over the perfectly photographed bowls and jars bursting full with ice cream. My bowl is not so perfectly styled, but it was equally as delicious! I made vanilla-cinnamon nice cream topped with a chocolate swirl. Ice cream for breakfast never tasted so good!!

After breakfast I finished up packing up my car, got gas, and headed off to school. I snacked on a couple peaches and an apple during the drive. By the time I got back to school and unpacked my car (took me like 6 trips bc I don’t know how to travel light) it was just past 3 oclock. I quickly had some fruit because I knew I had to head into the lab to get some work done before the next day (procrastination station). I scarfed fown some watermelon and a couple oranges and headed into lab.

After I finished my work in the lab I came home, cleaned up, and started getting ready to make dinner. I had plans to make my Coconut Curry Recipe for a friend that night. It didn’t turn out quite the same since I tweaked the ingredients a bit from the recipe listed above, but it was still good! We ate with chopsticks and had some good conversation. It was a perfect way to spend the last night before starting our semester.

That rounded out my day of eating!

Also a little blogging update: I am going to work on getting posts up on my blog on a M-W-F schedule this year. I am planning to stick to that, but school always has to come first, so there may be times when posts don’t go live. Thanks for joining me on this crazy ride we call life and continuing to come back to my blog.
