WIAW: Running, Fall Foods & Studying Drugs

Happy Wednesday! You (we) made it half-way through the week! What better way to celebrate than by sharing a day full of delicious eats & life happenings. Thanks Jen from Peas & Crayons for the What I ate Wednesday party!

For breakfast I have been loving making overnight oats. I have had my APPLE PIE OVERNIGHT OATS recipe at least 3 times a week for the past month. I cannot get enough! It is seriously so easy to make the night before and just grab out of the fridge the next morning.

Up next is class all day. I get a quick lunch break at noon for one hour and usually (nearly always) go home for lunch. I live super close to the dental school so I love being able to run home, whip up a quick lunch, and relax for a few minutes to get myself ready for the afternoon.

I had a big brown rice wrap stuffed with lettuce, peeled carrot, roasted cannellini beans, tomatoes, hummus, and sriacha. This really hit to spot and fueled me enough to get through my busy afternoon.

After class it is time for a run! I usually am done with class between around 3-5 or so (depending on the day) and then head out for a workout. I would prefer to do my workouts in the morning, but class starts at 8, and it is too dark out/ unsafe for me to be running outside/ heading to the gym that early. Plus, it is nice to be able to take a break and decompress from the day with a workout after class.

Dinner was a bowl the size of my head of some veggie soup that I made in the crockpot. This soup is loaded with lentils, potatoes, and lots of other delicious veggies. I didn’t get any good photos while making it, but it definitely was a delicious recipe. I think I will have to make it again so I can photograph it and share the recipe! (Not that bad photos have every stopped me before lol ;)).

After I eat dinner I usually study for the rest of the night. I get so bored sometimes while studying that I start to do random things like practicing headstands, doing yoga, lifting weights, making tea…….the list goes on lol. I snacked on these ona cookies while studying some dental pharmacology.

After studying I get ready for bed and hit the hay. Life ain’t always glamorous, but I try to make the most of my days in school by staying active and eating good food!
