Sweet ‘n Spicy Shrimp Broccoli Slaw

Looking for a healthier swap for your traditional Cole-slaw salad for the Fourth of July? This Asian-inspired dish is full of healthy veggies and protein that makes for an excellent barbeque side dish, or a perfect work week lunch! Broccoli slaw mix can be found by the lettuce at most grocery stores. It is a mix of shaved broccoli, cabbage, and carrots! I added in edamame, red peppers, snow peas, sautéed shrimp, and small heads of broccoli to add more variety to the dish. It stores well for up to 5 days in the fridge so you could make this on a Sunday and have work lunches all week long! The only change that I would make to this dish is using smaller/baby sized shrimp so that there was more shrimp throughout.

The ingredients you will need are:

  • 1.00 cup shelled, Edamame
  • 1.00 oz, Fresh Snow Peas
  • 2.00 tablespoons, Peanut Butter, Powdered
  • 0.50 tbsp, Spices, garlic powder
  • 2.00 container (12 oz. ea.), Broccoli Slaw
  • 18.00 medium, Crustaceans, shrimp, mixed species, raw
  • 1.00 cup, chopped, Broccoli, raw
  • 3.00 tablespoon, Oil – Olive
  • 1.00 tbsp (15mL), Gluten Free Soy Sauce
  • 2.00 Tablespoon, Organic Raw Honey
  • 2.00 tbsp, Rice Vinegar
  • 2.00 tsp (5 g), Chili Garlic Sauce
  • 1.00 tbsp (15ml), Teriyaki Marinade & Sauce
  • 1.00 tsp, Crushed Red Peppers

This Recipe makes about 6 lunch-sized servings for under 200 cals! I can always count on vegetables to add some volume to my food without adding tons of cals! Each serving has 11 grams of protein & 5 grams of fiber. I have been pairing this salad with carrots (more veggies of course) & hummus for my lunches all week!
