Marinated Shrimp & Veggie Kabobs

One of my favorite things about the summer is grilling out. I love the way grilled food tastes and get so excited when I get to trade my george foreman for an outdoor grill. Grilled meat/seafood/veggie kabobs are definitely in my top 5 favorite foods. I have been working on creating all of my marinades, sauces, etc. from scratch instead of using packaged ones. I decided to experiment with this meal and it came out amazing!

The veggie kabobs were marinated in a tuscan-balsamic marinade and the shrimp was marinated with cilantro-lime. I love to marinate veggies and meats to make my food super flavorful! It only takes a few minutes to to prepare the marinade and both recipes use common ingredients that you probably already have in your home!


For the veggie kabobs you will need:
2 colored peppers
1 large red onion
1 container of portabella mini mushrooms
3 tablespoons olive oil
2 tablespoons white wine vinegar
1 tablespoon balsamic vinegar
4 tablespoons water
2 cloves minced garlic
1 teaspoon tuscan seasoning
1/2 teaspoon garlic powder
salt & pepper to taste

Directions: Chop the peppers and onion into large chunks and cut the mini mushrooms in half. Put them into a large ziploc bag and prepare the marinade. Add the olive oil, vinegar, water, seasonings, and garlic to a small bowl and mix well. Pour the marinade over the veggies in the bag, zip it up and shake the bag around to evenly coat the veggies. Allow the veggies to marinate in the refrigerator for 2 hours or more. Then soak wooden kabob sticks in water and assemble the kabobs. I make sure to get a bit of each vegetable on the kabobs so there is a nice variety on each. Grill them to your liking! I liked my vegetables nice and crispy so I tend to cook them for a bit longer.

Shrimp Kabobs:
These were even simpler than the veggie kabobs. The marinade uses very cheap ingredients (mine cost me less than $1).

30 raw shrimp
2 limes, juiced
1/8-1/4 cup cilantro
1 tablespoon olive oil
1 tablespoon white wine vinegar
1 tablespoon water
2 cloves minced garlic
salt & pepper to taste

Directions: Add all of the ingredients into a small bowl/dish and mix well. Peel the shrimp and add it to the bowl. Allow to marinade for 1 hour and then assemble it on the sticks. Grill them up & enjoy!


I served my kabobs with some grilled corn on the cob! This meal would be perfect for a barbecue, cook out, or fourth of July party!
