Healthy Chickpea Blondies!

I have been planning on making some healthy chick pea blondies for some time now. I finally got around to it! These were super delicious, and did not taste like beans at all! I love that beans are so easily disguised in desserts!- well, as long as you have a high-quality food processor! I used my ninja to make these blondies. You could try using a blender, esp. if you have a high quality one like a vitamix, but a cheap blender probably will not get the mixture nice and smooth. Of course, these are gluten free and made without butter, sugar, or hydrogenated oils. These are perfect for dessert, a mid-day snack, or even breakfast!-Yes they are THAT HEALTHY!

I had all of these ingredients on hand, because most of these are my pantry staples that I keep around for healthy meals and baking! Hopefully you have all/most of these items on hand so you don’t have to go out and buy them!

You will need:

1 can of chickpeas/garbanzo beans

2 tbsp coconut flour

1/3 cup unsweetened all natural applesauce

1/3 cup organic raw honey

2 tbsp shredded raw coconut

1/4 cup melted coconut oil

1 tbsp vanilla extract

2 packets of stevia

1 tbsp cinnamon

1 extra ripe banana

2 egg whites

1 teas baking powder

1/2 teas baking soda

1/3 cup dark chocolate chips

 

This may seem like a lot of ingredients and therefore a lot of $$$ but like I said, I have all of these ingredients on hand normally. Plus, I use all of these ingredients for man of my recipes such as my coconut cinnamon sweet potatoes!

Directions:

This recipe is super simple to make- especially if you have a food processor! All you have to do in add everything to the food processor and blend! First, I added the coconut flour the the food processor, followed by the shredded coconut. Next, drain and rinse the garbanzo beans and add them to the food processor. Make sure you rinse them well!!

Then, add the applesauce, honey, egg whites, stevia, vanilla extract, cinnamon, baking soda and powder and ripe banana! I freeze my bananas when they get super ripe, so I took one out of the freezer and thawed it in the microwave for 1 minute.

Next, put the top on your food processor and blend! My ninja takes about 3 minutes of blending to get the mixture very smooth. Best part about it is that I can just push a button and walk away!

Then, poor mixture into a greased baking dish. Sprinkle the 1/3 cup of dark chocolate chips over the top.

Pop it in the oven for 1 hr!- It takes that long for the outside to get crispy, while the inside stays super soft. The banana, applesauce, and honey really help to hide the taste of the beans, while naturally sweetening this healthy treat!
