Chocolate Coconut Zucchini Oats!



Zucchini in you oatmeal? I know. You must think I’m crazy. It’s actually super delicious and helps get in an extra serving of vegetables with breakfast!


Making this for breakfast was probably the best decision I have made all week. I went to the gym this morning and came back starving! I decided to prepare this and pop it in the oven before I took a shower. I could smell the chocolatey-ness as soon as I got out of the shower. It smelled liked I had brownies in the oven. Go make this right now! Seriously. Drop what you are doing and get baking!


I small ripe banana

1/3 cup shredded zucchini

1/2 cup oats (I use GF Bob’s Red Mill)

1/2 cup vanilla unsweetened almond milk

1 tablespoon cocoa powder

1/2 tablespoon vanilla extract

1 tablespoon shredded coconut

3 tablespoons egg whites

1/2 tablespoon truvia/ other sugar free sweetener



Note: Vanilla extract not pictured


Pre-heat oven to 375 degrees.

Add 1/2 cup oats, cocoa powder, shredded coconut, shredded zucchini (I shredded mine with my ninja), egg whites, 2/3 of mashed banana, almond milk, vanilla extract, and truvia into a bowl. Mix together very well. I use a whisk to mix mine.




After everything is mixed well, pour into a ramekin or other small glass dish. Slice the last 1/3 of the banana and place it on top. Garnish with coconut.



Bake for 40-45 minutes!



Finished Product! It was so delicious! It was perfectly crispy on the outside and soft and gooey on the inside. I could go on and on about how delicious this was. The zucchini and egg whites help to add some more volume to this oatmeal to keep you full. The portion size was huge! The oats were spilling of the top of this ramekin. These oats provide you with lasting energy, fiber, and protein. And the best part of all- this recipe is only 335 calories for the entire bowl!
