Black Bean Brownies

What better recipe to be posting to my blog today than Black Bean brownies??? I am so excited about these because they don’t use 2 of the main ingredients that I have seen other recipe creators use 1. peanut butter (good for those that are peanut-free) and 2. honey/agave (not for strict vegans/can be calorically dense). I’m also pretty darn excited right now because I am posting this recipe from my new macbook air 🙂 I finally broke down/ saved up for a new computer for dental school #helpmeimpoor I am loving using this new computer already and know it is going to make my blogging so much easier. Now I won’t have to worry about my computer randomly shutting off or my less than 2 hour battery life. New computer = faster posting of recipes & other blog happenings.

I had the day off work yesterday after working like a bazillion hours (really 8-10 hour days 5-6 days a week lately) so I decided to experiment with making some black bean brownies! I have tried making black bean brownies once or twice before, but they ended up dry and crumbly. I was trying to think of a way to make them differently than most recipes that I have seen out there, while still disguising the bean taste. I think I came up with a pretty great combo with a really low calorie count!

Nutrition facts will be included per the usual.

Ingredients:

1 can black beans, drained & rinsed

2 Tbsp. Coconut Flour

1 scoop Vanilla Protein powder (I used Sunwarrior Vegan)

1 tsp. Starbucks Mocha coffee grounds

2 tsp. Vanilla Extract

2 eggs

1/3 cup Stevia baking blend

1/4 cup brown sugar

1 large ripe banana

1/3 cup Hersheys Cocoa Powder

2/3 cup chocolate unsweetened almond milk

1 tsp. baking powder

1/2 tsp. sea salt (fine ground)

Directions: The directions for this recipe are super simple. All you need to do is add everything to a food processor/Vitamix and blend well. Make sure to scrape down the sides of the food processor as necessary. When everything is blended super well (you don’t want any bean chunks left anywhere!) pour it into a 9×11 baking dish and bake for about 20 minutes on 350. Check it with a tooth pick and make sure that it comes out clean. There you have it! One bowl/ kitchen tool & one pan = easy clean up & preparation.

Woot woot 50 cal brownies! Just a fore-warning- these do taste like healthy brownies. They definitely do not taste like decant/ full-fat/full sugar brownies, but they sure are tasty! So healthy you can eat them for breakfast (may or may not have done this ;). Who doesn’t love dessert for breakfast??
