Banana Berry Protein Pancakes

My favorite meal of the day is definitely breakfast. I love oatmeal, fresh fruit, egg white omelets, smoothies, protein pancakes, healthy French toast, protein shakes, greek yogurt & fruit, protein mug cakes, and smoothie bowls. I love to start my day with healthy & nutritious food that will give me energy to help me power through my busy days. I was actually never much of a pancake person because they were often very dense and drenched in sticky syrup. I have found a way to make them protein packed, gluten free, and light and fluffy. These pancakes are much healthier than typical box pancakes and offer 21 grams of protein, 7 grams of fiber & 282 calories for the entire recipe (including toppings!!!).  How much better does it get than that???

One of my goals with this blog is to prove to people that healthy food does not have to be tasteless, boring, or repetitive. There are so many food swaps that can be made to make healthier meals. This recipe trades in syrup for yogurt & fruit and trades in white flour for protein powder & brown rice flour. Sunwarrior Vegan Protein Powder is my favorite protein powder to use for protein pancakes or protein baked goods. I find that vegan protein powder has the best consistency for baking & recipes. I also like vegan protein powder in fruit smoothies, but do not prefer it by itself in a shaker bottle.

The ingredients below are for one serving- feel free to double, triple, quadruple, etc. the recipe to fit your needs!

 

Ingredients:

  • 1.00 tbsp(s), Organic Brown Rice Flour
  • 1.00 large, Eggs – White only, raw
  • 3.00 tbsp(s), Silk Unsweetened Almond Milk
  • 1.00 tsp(s), Organic Chia Seeds
  • 0.25 cup, Light & Fit Vanilla Greek Yogurt
  • 0.25 cup(s), Blueberries – Raw
  • 0.33 cup(s), Strawberries, raw
  • 0.67 Large Banana (126g), Banana
  • 0.50 Scoop 25g, Protein Powder Vanilla

This recipe has only 282 calories, 3 grams of fat, 21 grams of protein, and 7 grams of fiber. When looking at the nutrition facts please do note that the grams of sugar come from all natural sources! There is no added sugar in this recipe- the sugar comes from the banana and berries. I don’t feel the need to limit my sugar intake in the form of fresh fruit.
