Baked Banana Bread Oatmeal


What’s better than warm, soft banana bread on a winter morning’s day??? Baked Banana Bread Oatmeal of course!! It has way less fat, calories, and sugar, yet has more protein, and fiber. I love making baked oatmeal on busy mornings because all you need to do it mix everything together and pop it into the oven for about 40 minutes. I will make this in the morning and then get ready for the day while it cooks. The ingredients are super basic and cost friendly!

You will need:

1/2 cup oats (I use Bob’s Red Mil Certified Gluten Free rolled oats)

2/3 cup unsweetened vanilla almond milk (I prefer Silk)

1 small ripe banana

1 egg white or 4 Tablespoons of liquid egg whites

1 teaspoon vanilla extract

1 teaspoon cinnamon

1 teaspoon unsweetened shredded coconut (optional)

pinch stevia/ sugar free sweetener or choice (optional-I rarely use since the banana is so sweet itself)

Optional: Flax seeds, chia seeds, chopped nuts, chocolate chips, dried fruit, etc. Get creative!


Preheat oven to 375 degrees

Cut about 2/3 of the banana and put it into a bowl.

Mash the banana, then add the 1/2 cup oats, 2/3 cup almond milk, egg whites, vanilla, cinnamon, coconut, and stevia. Mix everything well with a wisk and pour it into a small ramekin or other small baking dish. Then, thinly slice the last 1/3 of the banana and place it on top of the oatmeal in the dish.

Put the ramekin in the oven and bake for 40-45 minutes (every oven is different so experiment with different times to see what works best).
