Apple Cinnamon Baked Oats!

I love making different variations of baked oatmeal, especially in the winter! This was so cinnamon-licious and I will definitely be making it again!


You will need:

1/2 cup old fashioned (or quick) oats (I used GF Bob’s Red Mill)

1/2 cup unsweetened vanilla almond milk

3 tablespoons of egg whites (about 1 large egg white)

1 teaspoon of cinnamon

1/2 teaspoon pure vanilla extract

1 tablespoon chia seeds

1 small/medium sized apple – I used golden delicious in this recipe, but another variety works too!

1 tablespoons Peanut Butter Company Cinnamon Raisin Swirl PB

 

Directions:

Preheat oven to 375 degrees

Begin by adding the oats, almond milk, cinnamon, egg whites, and chia seeds to a bowl. Mix everything together.

Next, cut the apple into thin slices. Place half of the apple slices on the bottom of a baking dish.

Pour the oatmeal mixture from the bowl on top of the apples.

Place the rest of the apples on top of the oatmeal. Garnish with extra cinnamon if desired.

Bake the oatmeal for 40-45 minutes. Top with the Cinnamon Swirl PB when its done and enjoy!

This recipe can be adapted in so many ways with different nut butters, adding in different fruits, nuts, seeds, etc.
